The Proper Pig, which opened in late 2016 as part of Waterville’s downtown revitalization project, is a casual, pub-food restaurant with a heavy emphasis on all things porcine. It starts with the behatted, bow-tied swine in the logo, and continues on into the menu, where you’ll find a few solid pork dishes, the best of which is the excellent (and incredibly messy) pulled pork Piggly Wiggly sandwich. Others demonstrate imbalances that range from minor (oversteamed Taiwanese-style mini buns filled with agreeably crispy pork belly) to major (dessert levels of sweetness in the smoked baby back ribs and honey-glazed cornbread). If you’re a fan of spice, don’t shy away from the terrifying-sounding Proper Popper hamburger, a lean beef patty topped with ghost pepper cheese, and a soothing slice of grilled pineapple to cut through the heat. It’s nowhere near as spicy as it sounds, and with a bright cilantro-lime aioli, bacon and red onion, it’s a unique burger that showcases chef and co-owner Fred Ouellette’s creativity and kitchen chops.
