After a visit to Northern Union, a wine-focused restaurant located on a particularly green stretch of Shore Road in Ogunquit, you’d never guess that its proprietors, Matt and Lauren Wickert, had never run a restaurant before. Their whimsical, modern design sense and self-assured beverage program make the business feel as if it has had several years to mature. Even little touches, like Northern Union’s motto, “Enjoy superfine food,” printed on every menu, reveal their confidence. It certainly helps that they have executive chef, Romann Dumorne heading up their kitchen. Dumorne – himself a first-timer at the helm – makes nearly everything on the menu in-house, applying traditional techniques to an eclectic menu. Among his best dishes are a housemade tagliatelle with spring garlic cream sauce, king oyster mushrooms and quick-blanched fiddlehead ferns; a sculptural beet cake, presented as torn shreds surrounding a tart quenelle of frozen yogurt; and perhaps best of all, a ramp soup that projects the onion/garlic flavors of wild leeks across three dimensions of creamy purée, pickle and ash. Northern Union’s tagline might sound a bit boastful, but Dumorne has the skills to anchor a meal that is, in almost every way, superfine.
