Chef and co-owner Moses Sabina describes the food that he prepares at Portland’s Hot Suppa! as “pan-Southern cooking,” and that’s just about right. There are Cajun items on the menu here, like a wonderful, dark gumbo crammed with seafood and andouille, and even an elegant Pernod-scented Sazerac that purists might call heretical. But you’ll also find Low Country dishes, like the extraordinary Hot Cat, a cornmeal-crusted fillet of fried catfish, served along with shrimp on a runny pool of creamy, buttery grits. Some dishes, like the superb, grilled cornbread, take a little inspiration from both sides of the Mason-Dixon. No matter their provenance, don’t miss the sauce-optional barbecue spare ribs appetizer, served in an entrée-sized portion, or the fried chicken and waffle, a dish that is quintessentially Southern, but elevated by the most Northern of ingredients: Maine maple syrup.
