Westbrook seems like an unlikely place to find poké, Hawaiian-style cubed fish and rice. But when you hear about owner Jimmy Liang’s plans to build a chain of Big Fin Poké restaurants, it becomes clear this first location is a pilot project, a proof-of-concept for something much larger. And overall, it is a successful one, with fresh (though mostly not local) ingredients, clear attention to food safety and cleanliness, and an almost infinite number of choices to personalize a meal to your tastes. The poké bowls with short-grain sushi rice and salad bowls can be very good, especially ones with cubed tofu, tuna, yellowtail and salmon. Both the yuzu citrus and spicy aioli sauces are excellent, and do well to cut the flavors of heavier, fattier ingredients like the sake-marinated beef brisket. Staff are generally friendly and helpful, although newer servers struggle occasionally with names of toppings and mix-ins (“I’d like masago arare [tiny puffed rice flour pearls], please.” “Garlic?” “No, masago arare.” “Oh, onion!”). It’s hard to fault them too much, though, because at this stage, poké and its paraphernalia have yet to become familiar to most Mainers. But if Liang has his way, that will all change soon.
