Christmas Stars: Finalist

6 egg whites
1 pound of sugar (2 cups)
1 tablespoon cinnamon
zest of 1 lemon
1 pound of ground almonds (2 1/2 cups)

Preheat oven to 350.

Beat egg whites until stiff, add sugar and cinnamon. Beat 5 minutes more.

Remove 1 cup of egg white mixture. Set aside.

Add almonds and lemon zest to remaining egg white mixture.

Roll into 1/2 inch slabs (i do this in small sections and add flour to board and mixture to make neat slabs for cutting. Cut into star shapes.

Use teaspoon to top with reserved egg mixture with teaspoon.

Bake at 350 until lightly brown.
